Pineapple-Strawberry Danish Bread Pudding
1 French Stick, preferably day-old or stale
1 stick salted butter, melted
2 TBS cornstarch
1 TBS cinnamon
1 TBS vanilla
1 cup sugar
2 eggs, beaten
1 pint heavy cream
1 can crushed pineapple, drained**
1 block cream cheese, cubed
Strawberries, halved
Pre-heat the oven to 350°. Spray a standard casserole dish with cooking spray. Cut the bread into cubes, place in the prepared casserole dish. Beat together the butter, cornstarch, cinnamon, vanilla, sugar and heavy cream. Add the eggs and drained pineapple and combine. Pour over the bread cubes, toss gently to coat evenly. Arrange the cream cheese and strawberries over the top and bake for about an hour.
**Pro Tip: Reserve the pineapple juice and add a splash to your mimosa for a nice twist on a classic; especially if you’re serving this dish at brunch!!
